Pork Loin With Raisin Sauce: New Years Day Dinner
From: Southern Living Magazine November 2002: Excellent: From Mississippi

1 (5 pound) boneless pork loin roast
5 garlic cloves, thinly sliced
1/2 cup white wine
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons vegetable oil

Raisin Sauce
Cut slits in pork loin roast, using a sharp knife; push garlic slices into each slit. Rub pork loin evenly with salt and pepper. Soak 15 minutes in 1/2 cup white wine.
Brown: on all sides in hot vegetable oil in a large heavy skillet over medium heat. Place in a large lightly greased roasting pan adding all juices and wine.

Bake: At 325 degrees for 1 hour and 45 minutes or until a meat thermometer inserted into thickest portion of pork registers 155 degrees. Let stand 10 minutes before serving. Slice and serve with Raisin Sauce.

Raisin Sauce: Makes 1 1/2 cups ( I doubled the sauce)
1/2 cup firmly packed light brown sugar
1/4 cup water
1/2 cup golden raisins ( I omited the raisins as our family doesn't like them)
2 T. vinegar or white wine
1 T. butter
3/4 teaspoon Worcestershire sauce
1/4 t. salt
1/8 t. pepper
1/8 t. ground cloves
1/8 t. ground mace
1/2 cup jellied cranberry sauce

Stir: together all ingredients in a small saucepan; heat over low heat, stirring until cranberry sauce melts. Serve warm.

Deanna's chili bake
Serves 6
This is a favorite recipe that I got from my lovely sister-in-law Deanna Patrick. It has been a favorite for birthdays and other celebrations since I learned to make it, my professor even asked for the recipe after I took it to a communication club dinner.

1 lb. ground beef
1 can black beans
1 can corn
4 tortillas
2 cups shredded monterrey jack or cheddar cheese
1 can diced green chilies
2 Tbs. chili powder
1/2 tsp. garlic powder
salt and pepper to taste

Heat oven to 350 and grease a 9x11 baking dish. Brown beef and drain. Add black beans, corn, and chilies and heat them through. Add spices. Layer half of the meat mixture in the pan, top with cheese and tortillas. Put the rest of the meat mixture in the pan and top it with another layer of tortillas and cheese on top. Bake for 15 minutes, or until the cheese has melted.

Serve with Mexican rice and sour cream if you like.
Old Settlers Baked Beans
I received this recipe from Kim Kreider in Pennsylvania.
My kids love these beans so much that they call them, ¨Mom´s Famous Baked Beans

1 large can bushes baked beans
1 large can kidney beans
1 can lima beans ( white or butter beans)
1/2 lb. bacon
1 onion chopped
1 lb hamburger
1/4 cup barbeque sauce
1/4 cup ketchup
1/3 cup brown sugar
1/3 cup white sugar ( can use splenda powder instead)
2 Tablespoons molasses
2 tablespoons mustard
1 tsp. chili powder
1 tsp salt
1/4 tsp. ground pepper

Cut bacon in pieces and fry. Add chopped onion and hamburger.
Cook until meat is browned. Add all other ingredients. I drain and rinse
the kidney beans and lima beans before adding to cut down on sodium.

Stir all ingredients together. Pour in crock pot leave on low or can freeze in containers
at this point too before putting in crock pot.

I sometimes put them in the oven for an hour on cold days.
350 degrees for one hour.
Dan's Favorite Chili: This is a Meaty Three-Bean Chili recipe and a Love Family favorite

3/4 pound Italian sausage links cut into 1/2 inch chunks
3/4 lb. ground beef
1 large onion chopped
1 medium green pepper chopped
1 jalapeno pepper, seeded and minced
2 garlic cloves, minced
1 cup beef broth
1/2 cup Worcestershire sauce
1 1/2 teaspoons chili powder
1 teaspoon pepper
1 teaspoon dry mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
6 cups chopped fresh plum tomatoes or italian tomatoes ( about 2 pounds) or two large cans chopped tomatoes
6 bacon strips, cooked and crumbled
1 can 15-1/2 oz kidney beans rinsed and drained
1 can 15 oz. pinto beans, rinsed and drained
1 can 15 oz garbanzo beans rinsed and drained.

Directions:
In 4 qt kettle brown the sausage and beef together. Add and saute onion, peppers and garlic. Add broth, worcestershire sauce and seasonings.
Bring to a boil over medium heat. Reduce heat; cover and simmer for 10 minutes.

Add: Tomatoes and continue to to simmer for 30 minutes. Add all beans and simmer for one hour. Stirring occassionally.


Serve: With your favorite grated cheese and with the crumbled bacon strips on top.

Yields: 10-12 servings or 3 quarts.
Dear Denise, Your receipe's sound very wonderful and I am very fond of mexican and beans in general...But right now I am recovering from a terrible Acid Reflux attack and so will wait to try these receipes...I will have to do one for the Lamb' family gathering to hornor you...love mom
