Whoopy Pies- Pennsylvania Dutch-Best Recipes

Pennsylvania Dutch recipe from Lancaster County, PA:
From an old Mennonite cookbook submitted by Betty Landis

1 c. shortening
2 c. sugar
2 eggs
1 c. sour milk
2 tsp. vanilla

1 cup hot water (scant)
2 tsp baking soda

Cream: shortening and sugar; add eggs and beat well.

Add: sour milk and vanilla.

Sift:
4 c. Flour
1 t. salt
1 c. cocoa

Mix: well into egg mixture.

Combine & Add Last:
2 t. baking soda
1 c. hot water (scant)

Drop on greased cookie sheet and bake at 400 degrees for 8 mins.
Allow the cookies to cool then spoon the following cream filling on the bottom side of one cookie and add another cookie ontop of the filling like a Oreo cookie. Be generous with the cream filling as too little will make the pies dry.

Cream Filling:
1 box powdered sugar
1/3 cup flour
pinch of salt
1 T. vanilla
1/2 cup milk
1 c. crisco
1/2 c. butter

Stir: first 5 ingredients then add last 2. Mix in electric mixer about 10 mins. beating hard till creamy.
